These olives are rigorously harvested and selected by hand. They have a slightly elongated shape and a very small core. They have an excellent pulp yield and a slightly acidic aftertaste. They are very ductile for processing and excellent for pairing with pizza, appetizers, first courses, salads, etc.

AITANA OLIVE IN WATER

Aitana dei Monti Tifatini variety olives. These olives are crunchy because they are harvested before veraison. Their peculiar characteristic is that of having a very small stone in favor of a lot of pulp.
